Slow Cooker Pot Roast

Slow Cooker Pot Roast

 

Enjoy dinner when you arrive home, a little prep work in the morning pays off as this pot roast simmers all day in the slow cooker.

 

Ingredients

3-4 lbs chuck roast

salt, pepper and garlic powder to taste

red wine for deglazing skillet

1 tablespoon of Worcestershire sauce

1 tablespoon extra virgin olive oil

2 cups beef broth

1 teaspoon of thyme

1 teaspoon of basil

1 teaspoon of Italian seasoning

1/2 teaspoon basil

2 onions (1/2 of an onion diced 1 1/2 onions cut into large chunks)

4 cups baby potatoes

3 cups baby carrots

4 tablespoons cornstarch

1/2 cup of water

 

  1. season chuck roast with pepper, salt and garlic powder to taste.
  2. brown chuck roast in large skillet
  3. remove chuck roast from skillet and put into slow cooker
  4. deglaze skillet with some red wine and Worcestershire sauce
  5. add beef broth to slow cooker
  6. add red wine and Worcestershire mixture to slow cooker
  7. add spices (basil, thyme and Italian seasoniing)
  8. add diced onion to liquid in the slow cooker
  9. add baby potaotes, carrots and big chunks of onion to slow cooker
  10. cook on low for 6-8 hours
  11. remove from slow cooker, let the chuck roast rest for 5 minutes
  12. make gravy from juices in slow cooker, put slow cooker on high (make a slurry with cornstarch and water, add to juices and whisk until thickened)
